I think we have perfected The Taco. Let me explain. Most people’s “default” meal (when they can think of absolutely nothing else to make to eat) is usually something like macaroni and cheese, a grilled cheese, fish sticks, fruit snacks.
All eerily similar to what we eat when we’re children. (I still really love fruit snacks.)
But our signature meal is tacos.

In lieu of fancy catering at our wedding last March, we hired the most amazing caterer based out of a Compton Mexican restaurant – so we and our guests wolfed down authentic Mexican tacos at our wedding out in the desert. Tacos! Can you think of a more perfect wedding treat?
We also eat them a lot with friends. Our friends Kelly and Julie make tacos with mushrooms and raw spinach. Weirdest tacos I’ve ever heard of, but they’re very tasty and I’m never one to turn down The Taco – especially with Julie’s amazing homemade guacamole.
Some of our friends go a little bigger and make The Fajita Taco – here we grilled chicken outdoors and served it with fresh guacamole and grilled peppers and onions. So easy and so perfect for feeding big groups of people at parties.
We also take them camping, which rocks because you don’t really need that much: just cans of beans (refried beans work well because if there are leftovers you can keep it in the can and it won’t get slimy bean juice everywhere), cheese, some kind of meat, chips and salsa. A one-pan meal, which totally makes a difference when you’re camping in a site with no potable water (i.e. Moab, Utah.)
Hubs and I make tacos at home a lot, too, but when we have an avocado to chop up in there, it’s really special. Slices of lime and fresh cilantro make it perfection.
See? The perfect taco, perfected by us. Er, sort of.
